CONTAMINANT MICROBIOTA IN CRAFT BEERS

The microbiological stabilization treatment of beer sometimes guarantees the absence microbiota. These treatments, however, are not usually done in craft beers. In this study, we have analyzed 38 beers from Spanish market and found that, 68% cases, exogenous microbiota is present. samples been classified based on their alcohol content results shown a large presence wild yeasts 100% contaminated with by volume (ABV) 6%, were only present 41% samples; bacterial contaminants detected 50% samples. We also that incorporating higher amounts raw materials contaminant situations may be due to excessive manual operations, lack automation during cleaning and, above all, finished product.
